• Cranberry Salsa


Ingredients

3 cups local Ruesch organic cranberries (or 1 cup apple and  2 cups cranberries)

1/4 cup cilantro, chopped

1/4 cup sugar

2 Tablespoons lime juice

4 green onions, chopped

2 jalapeños, seeded and minced

2 Tablespoons fresh ginger, grated (optional)

 

For serving:

Local Whole Grain Milling Co. Tortilla chips

Crackers

Local Organic Valley Cream cheese

 

 

Preparation

Lightly dice cranberries (and apple, if using) in food processor or blender.

Put diced cranberries in a medium mixing bowl add lime juice and sugar and mix well.  Stir in green onions, jalapeños and ginger.

Cover and let stand four hours.

Serve on crackers spread with cream cheese or with tortilla chips.

Refrigerate and use within three days.
