• Avocado & Vegetable Baguettes

From the Summer 2014 Share – Picnic Recipes

  • Servings: 2-4

Ingredients

  • 2 mini baguettes
  • 6 Tbsp. mayonnaise
  • 1–2 Tbsp. Sriracha hot sauce
  • 2 cups fresh baby spinach and/or arugula
  • 4 slices of Havarti cheese
  • 1 small tomato, sliced
  • 4 slices of red onion
  • 1 avocado, halved, pitted and sliced
  • 2 handfuls of sprouts [such as: soy bean, micro, etc.]

Preparation

1. Combine mayo and Sriracha together; set aside.

2. Slice baguettes lengthwise.

3. Spread mayo mixture onto both sides of the bread.

4. Layer ingredients evenly onto bread as listed above.
